Ingredients:

6 strips Shady Brook Farms® Hardwood Smoked Turkey Bacon
1 large shallot, chopped
1 garlic clove, minced
3 tablespoons olive oil
3 tablespoons sherry vinegar
1/4 teaspoon salt
1/8 teaspoon black pepper
1 (9-ounce) bag baby spinach, washed and dried (about 12 cups)
2 hard-cooked eggs, quartered

How to prepare this recipe:

  1. In large skillet, cook bacon over medium heat 5-9 minutes or until brown; cut into 1/2-inch strips.
  2. In same skillet, cook shallot and garlic in 1 tablespoon of the oil over medium heat until soft and golden. Add vinegar; simmer until syrupy. Add remaining oil, salt and pepper; remove skillet from heat.
  3. In large mixing bowl, gently mix spinach with dressing until lightly coated.
  4. Pile spinach on 4 salad plates; garnish with egg.
