Ingredients:

1 tablespoon vegetable oil
1 package (20 ounces) Shady Brook Farms® Traditional Turkey Bratwurst
2 pounds small red potatoes
1/4 cup fat free honey-mustard vinaigrette
1/4 cup dill pickle relish
2 tablespoons chopped fresh dill or 2 teaspoons dried dill
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1 red bell pepper, cored, seeded and cut into strips
1 small red onion, sliced
Salt and black pepper

How to prepare this recipe:

  1. In large skillet, heat oil over medium heat.
  2. Add bratwurst and cook, covered, until browned and cooked through.
  3. Cut each bratwurst in half lengthwise, then cut across into 1-inch pieces.
  4. While bratwurst is cooking, place potatoes in pot with enough lightly salted water to cover them by one inch.
  5. Bring to a boil; reduce heat and simmer about 20 minutes or until the tip of a sharp knife goes in easily.
  6. Drain; when cool enough to handle, cut potatoes into 1-inch pieces.
  7. In large mixing bowl, whisk together vinaigrette, relish, dill, mustard and lemon juice.
  8. Add bratwurst, potatoes, bell pepper and onion; mix gently until evenly coated.
  9. Season with salt and pepper. Serve warm or room temperature.
