Ingredients:

1 package Shady Brook Farms® Turkey Breast Cutlets diced
1 package (9 ounce) refrigerated cheese tortellini
6 cups salad greens, pre-washed
1/2 cup low-fat Italian salad dressing
1/4 cup shredded Parmesan cheese
1/4 teaspoon coarse ground black pepper

How to prepare this recipe:

  1. In a skillet, heat butter and 1 tablespoon oil. Add turkey.
  2. Sauté slowly, about 10 minutes on each side or until center is no longer pink and internal temperature reaches 170°F. Cool.
  3. Transfer to cutting board.
  4. Dice turkey into bite-size pieces.
  5. Cook and drain tortellini as directed on package; let cool slightly in colander.
  6. In a large bowl, mix tortellini, greens, turkey and dressing; top with Parmesan cheese and cracked pepper to serve.
